Sunday Dinner: Steak, Wasabi, and Seasame Noodles

Back in the house!!! Not every thing's completely done, but they assure us it will be 100% by Tuesday. Regardless, I got the kitchen back together and cooked for the first time in over a month. I've got some great meals planned this week, and I'm so excited I'm going to share them all!

This is a Rachael Ray one that we've tried a few times before, and is always amazing. Usually I use Ahi Tuna but it wasn't looking so good so I subbed flank steak and it turned out great!

Ingredient List:
flank steak
mixed greens ( I use the spring mix from Costco)
cucumber
grape tomatoes
radishes
carrots
avocado
green onions
thin spaghetti
creamy peanut butter
sesame oil
sesame seeds
vegetable oil
soy sauce
wasabi
rice wine vinegar
montreal steak seasoning
Japanese 7 spice
red pepper flakes

These are rough estimates because I rarely measure anything:

Noodles: cook about a 1/4 package thin spaghetti noodles. Whisk 1 tbls creamy peanut butter, 2 tbls soy sauce, 1 tbls veg oil and 1 tbls sesame oil and red pepper flakes ( I add a hefty pinch, we like it spicy, I've also used cayenne pepper). Toss with cooked pasta, top with green onions and sesame seeds.

Salad: mix greens, radishes, avocado, cucumber, carrots, and grape tomatoes and then toss with dressing.

Dressing: Whisk 1 tbls wasabi (or less, we LOVE wasabi so I add lots), 2 tbls rice wine vinegar, 1 tbls soy sauce, 3-4 tbls olive oil. Play with it until its good!

Steak: we used a 3/4lb flank steak for this. When I use Ahi, i usually use about a 1 lb piece. I mix the montreal steak seasoning and the Japanese 7 spice (not sure what all is in it, but it is good! I found it at World Market, the recipe calls for Chinese 5 spice, but I'm not a fan of anise, so I skip this. It would be good with just the steak seasoning or a heavy coating of salt and pepper). Cook the steaks on high heat (on my grill pan when its cold, on the grill when its nice out). I like my tuna super rare, just seared on each side for about 1-2 minutes. We did the flank steak medium rare and it was perfect. Let the steak sit, slice it thinly and pile it up on the salad!
